Buddha Bowl

Serves 1

INGREDIENTS:

  • 100g salmon
  • Large handful of red cabbage
  • 80g cooked broccoli
  • 1 tbsp edamame beans
  • 40g (dry weight) brown rice or quinoa
  • 1⁄2 avocado
  • 1 tbsp sesame seeds
  • 2 tbsp olive oil
  • 1 tsp wholegrain mustard
  • Juice of 1⁄2 lime
  • 1 tsp honey
  • 1⁄4 tsp of chilli flakes

METHOD:

  1. Simply layer the ingredients into a bowl.
  2. Mix up the dressing and drizzle over.
