Serves 1
INGREDIENTS:
- 100g salmon
- Large handful of red cabbage
- 80g cooked broccoli
- 1 tbsp edamame beans
- 40g (dry weight) brown rice or quinoa
- 1⁄2 avocado
- 1 tbsp sesame seeds
- 2 tbsp olive oil
- 1 tsp wholegrain mustard
- Juice of 1⁄2 lime
- 1 tsp honey
- 1⁄4 tsp of chilli flakes
METHOD:
- Simply layer the ingredients into a bowl.
- Mix up the dressing and drizzle over.
